Recipe: Sparkling Basil Limeade

As the weather heats up, the seltzer obsession at the Sol office is rising with it. Here’s a mocktail recipe to help you (and us – let’s be real) cool off:

 

Sparkling Basil Limeade
Serves 4–6

 

1 liter sparkling water/club soda*
6 limes
1/4 cup basil-infused simple syrup (recipe follows)
Lime slices
Basil sprigs

 

Zest two limes and squeeze the juice from all six into a pitcher. Add the syrup (adjusting for taste) and top with seltzer. Add lime slices & basil for garnish.

 

*Note: be sure your sparkling water is especially fizzy. Topo Chico and LaCroix are very good for this, as are most store brands. Perrier and San Pellegrino are not as fizzy as I’d like, and in this drink, the lime and syrup will dilute and flatten a less fizzy seltzer.

 

Basil-Infused Simple Syrup
Makes about 2 cups

 

1 cup sugar
1 cup water
5-10 sprigs of basil (preferably Thai, or the freshest variety available)

 

Heat water to a boil and add sugar. Stir until dissolved, and then for another minute (just to be sure there are no rogue sugar particles). Remove from heat and add basil. Let cool, remove basil, and store in the fridge.
